Ingredients

  • 225 g (8 oz) Feta, drained and crumbled
  • 120 ml (½ cup) Full-fat Greek yoghurt
  • 2 tbsp Olive oil, plus extra to finish
  • 1 tbsp Lemon juice
  • 1 small Garlic clove, finely grated
  • 3 tbsp Honey
  • 1 tsp Chilli flakes, or to taste
  • 1 tsp Apple cider vinegar
  • Fresh thyme or oregano leaves, to finish
  • Warm flatbread, pitta or raw vegetables, to serve

You’ll need: Food processor, Small pan

Method

  1. Whip the feta. Put the feta, yoghurt, 2 tbsp olive oil, lemon juice and garlic in a food processor. Blend for 2 to 3 minutes, scraping down the sides once or twice, until completely smooth and fluffy. Add a splash of cold water if it looks stiff. Taste; feta is salty, so you probably will not need more salt.

  2. Make the hot honey. Warm the honey and chilli flakes in a small pan over low heat for 2 to 3 minutes, just until runny and bubbling gently at the edges. Do not let it boil hard or darken. Take off the heat and stir in the vinegar. Leave for 5 minutes so the chilli can infuse.

  3. Serve. Spread the feta in a shallow bowl, making swirls with the back of a spoon. Drizzle over the hot honey and a little extra olive oil, scatter with thyme and serve at once with warm flatbread or vegetables.

Storage

The whipped feta keeps, covered, in the fridge for up to 3 days; stir before serving. Keep the hot honey in a jar at room temperature for up to 2 weeks.
