Ingredients

1 pound boneless, skinless chicken breast
2 tablespoons canola oil
1 large onion, diced
4 cloves garlic, minced

2 teaspoons chili powder
1/2 teaspoon chipotle chili powder
1 teaspoon smoked paprika
2 tablespoons all-purpose flour
3 cups chicken broth
2 cans white beans
1 can diced tomatoes
3 jalapenos, chopped
1/2 cup sour cream

Method

1. Heat oil in a large pot over medium-high heat.
2. Add the chicken and sauté until cooked through, about 5 minutes.
3. Add the onion, garlic, cumin, chili powder, chipotle powder and smoked paprika, and sauté for an additional 2 minutes.
4. Add the flour and stir, about 1 minute.
5. Add the chicken broth, white beans, tomatoes and jalapenos, and bring to a boil.
6. Reduce heat and simmer for 15-20 minutes.
7. Stir in sour cream and season to taste with salt and pepper.
8. Remove from heat and serve garnished with your favorite toppings – cilantro, avocado, cheese and sour cream are all delicious options! Enjoy!
